Job DescriptionSalary: Cold Food ProductionKnox College invites applications for the full-time, 10-month, benefits-eligible position in Cold Food Production. This position reports to the Director of Operations.   • Maintain high standards of sanitation
  • Prepare food items while adhering to strict food safety handling protocols
  • Complete appropriate temp and sanitation logs at the end of each shift
  • Clean all work areas and complete prep work 15 minutes prior to the end of shift to allow the manager or lead cook/crew leader to double check work areas
  • Ensure that all food labels are accurate and correct
  • Assist with Hard Knox front of house cold food options as needed
  • Inform manager of damaged and unsafe equipment that needs to be repaired or replaced
  • Ability to address client or student concerns about food
  • Maintain a positive and professional approach with coworkers and guestsEducation and ExperiencePosition Requirements:
    • Ability to create on trend food options from scratch following recipes
    • Ability to create more than 2,000 food items per week autonomously
    • Keep a clean and safe work environment
    • Ability to compose catering tray compositions autonomously
    • Acute understanding of all food allergens and the ability to exclude them from food options
    • Ability to function in a high stress environment
    • Possess math and reading skills
    • Ability to follow instructionsCandidates must possess or obtain within the first 90 days:
      • Illinois ServSafe Manager certification
      • Illinois ServSafe Allergen certification
      • Illinois ServSafe State training
      • COR Icon training for food allergens
      • Both Covid training certificationsSafety and Sanitation Requirements:
        • Practice proper sanitation and safety practices
        • Maintain clean prep areas, coolers, shelves, and floors in all work areas
        • Maintain mandated cooler shelf storage order guidelines
        • Must be able to follow job site, local, state, and federal health, and safety mandated requirements
        • Is expected to work catering as deemed necessary for operational needs
        • Able to lift 20 poundsPreferred Qualifications:
